Dairy Tip Tuesday: Pancakes Powered by Protein
Pancakes are a breakfast favorite here at The Hiland Home. The problem is, pancakes generally don’t give us that protein boost we need to get our day going. Sure, we can have a tall glass of Hiland Dairy Milk to get the morning protein we need…but what if we get a craving for a cup of Hiland Orange Juice instead?
That’s why we have this recipe for our delicious Cottage Cheese Pancakes! We found that using Hiland Dairy Cottage Cheese as a main ingredient for our pancake recipe can give you up to ten times the protein as regular pancakes…crazy, huh?
Cottage Cheese Pancakes
- 2 tablespoons Hiland Dairy Butter
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1-2 tablespoons sugar
- 4 eggs
- 16 oz. Hiland Dairy Cottage Cheese
Melt butter in frying pan. In a mixing bowl, mix together dry ingredients – flour, baking powder, baking soda and sugar. In a separate bowl, mix eggs and add cottage cheese until smooth. Combine egg and flour mixtures. Mix in melted butter. Drop batter by spoonfuls into hot frying pan. Flip when top of pancake bubbles.
