Easy Beef Crockpot Casserole

When the weather is nice, the last thing you want to do is spend hours cooped up in kitchen cooking over the weekend. It’s summer days like this that we can thank our lucky stars we have slow cookers on hand. Our Easy Beef Crockpot Casserole recipe lets you throw your ingredients in with minimal prep, set the timer and head to the ball game—maybe even a concert—and come back to a nice hearty meal!

Easy Beef Crockpot Casserole Recipe


  • 1 pound ground chuck
  • 2 large onions, diced
  • 4 medium potatoes, diced
  • 1 teaspoon salt
  • 4-6 carrots, sliced
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1 quart Hiland Dairy Milk


Place the ground chuck into the crock pot. Add the onions and potatoes evenly on top of the meat. Sprinkle salt, pepper, garlic powder and dried parsley over everything. Slowly pour the milk into the crock pot to cover all ingredients. Cook on high for 3 to 4 hours or until potatoes are tender.
