Hiland Classic Recipe: Chicken in Orange Juice

So we want to share one of our favorite chicken recipes from the Hiland Home cookbook that is fast, easy, delicious and loved by kids and parents alike.

Chicken in Orange Juice
- 4 boneless, skinless chicken breast halves
- 2 tablespoons prepared dijon-style mustard
- 1/2 cup chopped onion
- 1/2 cup packed brown sugar
- 2 cups Hiland Dairy Orange Juice
- 2 tablespoons Hiland Dairy Butter
- 2 tablespoons all-purpose flour
- Optional: top with chopped tomatoes
Preheat oven to 375°F. Coat chicken evenly with mustard and place in a 9×13 inch baking dish. Sprinkle with chopped onion and 1/4 cup of the brown sugar. Add enough orange juice to cover chicken, reserving the remaining orange juice and place butter on top. Bake in preheated oven for 45 minutes. Remove chicken from baking dish and pour sauce into a saucepan. Add chicken back to baking dish and sprinkle chicken with remaining 1/4 cup of brown sugar and return to oven for 10 minutes. In saucepan, whisk flour into sauce. Add leftover orange juice and heat on high until the sauce thickens. Transfer chicken from oven to serving platter, pour the sauce over the chicken and top with chopped tomatoes (optional) before serving.
