Why? Because it’s time to commemorate National Homemade Soup Day, and I want to share my favorite Broccoli Cheese Soup recipe with you. It’s loaded with all-natural Hiland Dairy products including Hiland Dairy Butter, Hiland Dairy Half & Half and Hiland Dairy Shredded Cheddar Cheese. Let’s get started!

Homemade Broccoli Cheese Soup
- 1/4 cup Hiland Dairy Butter
- 1/2 onion, chopped
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 2 cups Hiland Dairy Half & Half
- 8 ounces Hiland Dairy Shredded Cheddar Cheese
- 4 cups broccoli florets, chopped
- 1 cup carrots, julienned
- Salt and pepper to taste
In a large pot over medium-high heat, melt the butter and sauté onions until translucent. Add flour and whisk into a thick paste and continue cooking until the roux starts to bubble. Slowly add the chicken broth, half and half, broccoli and carrots. Reduce heat to low and simmer for 20 minutes. Add the cheese and stir until melted and smooth. Add salt and pepper to taste. Serve with bread or crackers.
Cut up and toss in a cup of cauliflower, cooked potatoes or celery to add extra flavor and texture. Dig in, Divas!
