You’ll Flip for These Pancakes
Breakfast is the most important meal of the day, so why make it ordinary? Think outside of the frying pan and make pancake breakfast bites using a mini muffin tin. Using fresh Hiland Dairy ingredients and serving them with a glass of pure Hiland Dairy Milk is the perfect way to start your family’s day. Breakfast is served!
Mini Pancake Bites
- 2 cups all-purpose flour
- 3 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 2 cups Hiland Dairy Buttermilk
- 1 egg
- 1/2 cup Hiland Dairy Butter, melted
Preheat oven to 350ºF. Spray a mini muffin tin with nonstick baking spray. Set aside. Whisk together flour, sugar, baking powder, baking soda and salt.
In a separate bowl, whisk together the buttermilk, egg and melted butter.
Slowly mix together the wet and dry ingredients. Scoop pancake batter into each cup, filling to about half full.
Bake for 15 minutes or until a toothpick inserted in the center comes out clean. Serve with warm maple syrup.
You can customize these breakfast bites to each family member’s taste by adding blueberries, strawberries or chocolate chips to the batter before baking.
