Time Traveler Ice Cream Sandwich

Go back in time this summer, and treat yourself to a homemade ice cream sandwich. This tasty snack is not only smooth and delicious but it will also take you back to your childhood. What’s the secret that makes this ice cream treat so scrumptious? It’s Hiland Dairy Time Traveler Ice Cream!

Ingredients:

Directions:

Preheat oven to 350 degrees.

In a blender, combine the cake mix, shortening, butter, egg, water, and vanilla until well-blended.

Divide into four equal parts.

Roll out one part of the dough into a 10” x 6” rectangle between two sheets of waxed paper. Remove the top sheet and invert the dough onto an ungreased baking sheet. With a fork, score the dough into eight pieces, each measuring 3” x 2 ½”. Repeat with the remaining sections of dough.

Bake at 350 degrees for eight minutes or until puffed. Quickly cut along the scored lines with a sharp knife and then prick holes on the top of each piece with a fork. Place the individual pieces onto a wire rack and cool completely.

Slightly thaw the ice cream. Scoop approximately 1/3 to ½ cups ice cream and spread it onto one cookie rectangle. Place another cookie rectangle on top and press together slightly to spread the ice cream evenly. Wrap in plastic wrap and freeze for one hour.
