French-Fry Croquettes

Step up your appetizer game with this french-fry croquettes recipe. These delectable morsels are made even more delicious with one simple ingredient – bacon! Pair the croquettes with your favorite sour cream, dip or salad dressing. Trust me, your guests will be impressed!
French-Fry Bacon Croquettes
Ingredients:
- 1 lb. bag crinkle fries, thawed
- 3 eggs
- 1 cup Hiland Dairy Shredded Cheddar Cheese
- 1/2 cup scallions
- 1/2 cup Hiland Dairy Sour Cream
- 1 tablespoon Hiland Dairy Milk
- 1/2 cup bacon bits
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup flour
- 1 cup panko bread crumbs
- Vegetable oil
- Hiland Dairy Dip (optional)
Directions:
In a blender, pulse crinkle fries until finely chopped. Add 1 egg, cheddar cheese, scallions, sour cream, milk, bacon bits and garlic powder. Pulse until just blended. Salt and pepper to taste.
Scoop a heaping tablespoon of mixture and roll into ball, about 2 inches in diameter. Tip: You can make these smaller if you like.
Put flour, 2 beaten eggs and panko bread crumbs into three separate bowls.
Dredge each ball in flour, dip in beaten egg mixture and coat with panko crumbs.
Deep fry in 350° F vegetable oil for 3 minutes, or until golden brown.
Remove croquettes from oil and drain on a paper towel.
Serve warm with additional sour cream, Hiland Dairy Dip or salad dressing.
Diva’s Tip
You can use plain bread crumbs to coat if you don’t have panko crumbs on hand. Also, these are amazing with a glass of cold Hiland Dairy Milk!
