Ice Cream Cookie Sandwiches

Easy, quick, and yummy Ice Cream Cookie Sandwiches. The perfect summer treat for those hot summer days. Pick your favorite Hiland Dairy Premium Ice Cream, cookie flavor, and toppings to make each one unique.

Ice Cream Cookie Sandwiches are the best of two worlds coming together, literally. The perfect cookie (I suggest a softer one but not overly soft) surrounding your favorite Hiland Dairy ice cream flavor. I’m a sucker for their Cookie Overload or Turtle Sundae but classic vanilla or chocolate is never a bad idea. Have you tried their Caramel Waffle Cone or Butter Pecan? I can’t pick a favorite because there really isn’t a bad choice.

Once you’ve decided on your cookie flavor and your ice cream flavor, the next step is deciding which topping you want to add to really complete this classic ice cream treat. Sprinkles? Chocolate chips? Nuts? If you are like my daughter, then you go with sprinkles every time.

I love this summertime treat because it’s easy to put together for a quiet summer night with your family or a party to celebrate the 4th of July! Just make sure to eat fast before it all melts!

  • Hiland Dairy Premium Ice Cream
  • Sprinkles, Chocolate Chips, Nuts


  1. Place the cookies bottom side up. Using an ice cream scoop or large spoon, scoop ice cream onto one of the bottoms of the cookies.
  2. Take the other cookie and place the bottom side on top of the ice cream scoop. Press down slightly firm to sandwich ice cream.
  3. Place sprinkles or topping of choice in a shallow dish. Take cookie and roll the ice cream side through the topping until all coated.
  4. Place on a cookie sheet and place back in the freezer to set.
